8 oz  Couscous, dry
0 1/2 tsp  salt
2 tbsp  chopped parsley
2 tbsp  fresh mint
2 tbsp  fresh lemon juice
1 pinch  black pepper
  1. Bring 1 1/3 cups water to a boil in a medium saucepan adding couscous and salt.
  2. Remove and let stand for 5 minutes.
  3. Gently mix parsley, lemon juice, mint, and pepper into couscous with a fork.
