1 tsp  vegetable oil
10 oz  boneless pork loin
2 cup  sliced white onion
1 each  small apples
0 1/2 cup  low sodium chicken broth
0 1/4 cup  apple cider
2 tbsp  cider vinegar
1 tsp  cornstarch
0 1/4 tsp  ground sage leaves
0 1/4 tsp  ground thyme
0 1/4 tsp  black pepper
Directions
  1. In medium skillet, heat oil over medium high. Add pork and onions. Cook over medium high for 5 minutes, stirring frequently.
  2. Add apple slices.
  3. In small bowl, whisk broth, cider, vinegar, cornstarch, sage, thyme, and pepper. Stir into pork.
  4. Bring liquid to a boil and reduce heat to low.
  5. Cover and simmer for 10 minutes, until pork is cooked and sauce has thickened.
