Ingredients Directions
  1. Bring 1 3/4 cups water to a boil in a medium saucepan and add rice and salt.
  2. Reduce to low heat and let simmer for 10 minutes.
  3. Add red pepper and corn to rice and let simmer for 10 more minutes.
  4. Add scallions stirring well.
