1 tsp  vegetable oil
0 1/2 cup  fresh chopped onion
2 each  medium garlic cloves
0 1/2 cup  canned unsalted diced tomatoes
0.3333 cup  picante sauce
0 1/2 tsp  chili powder
0 1/2 tsp  ground cumin
15 oz  low sodium canned black beans
0 1/4 cup  Cheese, colby & monterey jack, reduced fat, shredded
0 1/4 cup  fresh cilantro
1 tbsp  fresh lime juice
  1. Pour oil in a frying pan and heat over medium heat. Sauté onion and garlic 4 minutes, or until soft.
  2. Mix in tomato, picante sauce, chili powder, cumin, and black beans. Cook 5 minutes, stirring continually until thick.
  3. Take pan off of heat and coarsely mash mixture with a fork.
  4. Stir in cheese, cilantro, and lime juice, stirring until cheese melts. Serve at room temperature.
