0 1/2 cup  sugar
3 tbsp  cornstarch
0.125 tsp  salt
2 cup  lowfat milk
1 each  raw egg yolks
2 tbsp  fresh lemon juice
1 tsp  lemon extract
Directions
  1. Add sugar, cornstarch, and salt to a pot and mix in milk. Heat over medium heat, stirring continually until mixture becomes thick, about 1 minute.
  2. Whisk 1/2 cup milk mixture into egg yolk and pour back into milk mixture. Mix in lemon juice and lemon extract. Heat over low heat, stirring continually 30 to 60 seconds.
  3. Scoop pudding into dessert bowls and chill, covered 1 to 2 hours.
