1 each  cooking spray
24 oz  swordfish fillets
0 1/2 tsp  salt
0 1/2 tsp  black pepper
1 tbsp  sliced almonds
2 tsp  minced garlic
1 oz  seedless raisins
2 tbsp  Juice, orange, fresh
1 oz  pitted calamata olives
1 oz  roasted red peppers with brine
  1. Heat a cooking spray coated frying pan over medium-high heat. Season fish with salt and pepper and place in hot pan. Cook fish 5 minutes per side or until preferred degree of doneness. Take fish out of pan and set aside in a warm place.
  2. Spray pan again with cooking spray. Sauté garlic for 30 seconds. Mix in raisins, orange juice, olives, and pepper and cook 1 minute or until all the liquid absorbs. Spoon salsa over fish.
