3 cup  red onion, sliced
1 cup  red wine vinegar
3 tbsp  sweetener (sugar substitute)
0 1/4 tsp  kosher salt
0 1/4 tsp  black pepper
0 1/2 cup  distilled white vinegar
3 tbsp  coriander seeds
1 tbsp  olive oil
  1. In small bowl, mix onion, red wine vinegar, sugar, salt, and pepper. Cover and refrigerate 3 hours.
  2. Strain chilled onion mixture. Return to bowl and add white vinegar, coriander, and oil. Toss and serve.
