0 1/2 oz  sun dried tomatoes
1 cup  boiling water
10 oz  fresh plum tomatoes
0 3/4 cup  fresh sliced avocado
0 1/4 cup  fresh chopped red onion
2 tbsp  fresh basil
1 tbsp  sliced jalapeno peppers
2 tbsp  orange juice
2 tsp  grated lemon rind
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1 each  medium garlic cloves
Directions
  1. Soak sun-dried tomatoes in boiling water for 30 minutes. Strain and coarsely chop.
  2. In medium bowl, mix tomatoes, avocado, onion, basil, pepper, orange juice, lemon rind salt, pepper, and garlic.
  3. Transfer to serving bowl. Garnish with basil sprigs. Serve.
