12 each  medium oysters
2 tbsp  rice vinegar
2 tbsp  mirin
12 each  cilantro sprigs
2 tbsp  fresh ginger root
1 each  red hot chile peppers
0 1/4 tsp  peppercorns, green, ground
  1. Place 6 oysters on the half shell in a vegetable steamer.
  2. In small bowl, whisk vinegar and mirin. Spoon 1 teaspoon over each oyster; top each with 1 cilantro sprig, 1 slice of ginger, and 1 strip of chile.
  3. Sprinkle half peppercorns over oysters.
  4. Place lid on steamer and cook 2 minutes or until edges curl. Continue with remaining oysters and ingredients. Serve warm.
