1 1/2 cup  chopped parsley
5 each  medium garlic cloves
1 tbsp  oregano leaves
3 tbsp  olive oil
1 tbsp  red wine vinegar
0 1/4 tsp  kosher salt
0.125 tsp  black pepper
1 3/4 lb  Beef, skirt steak, inside, lean, raw, 1/4" trim
1 each  medium onions
  1. Combine parsley, garlic, and oregano in a bowl. Whisk in oil, vinegar, salt, and pepper.
  2. Preheat broiler. Slice steak into 4 pieces and lay on a roasting pan or baking sheet. Massage both sides of steak with parsley mixture. Broil 3 to 4 minutes per side. Take steak out of oven, cover, and let stand 5 minutes. Serve the steak with the raw onions.
