4 piece  100% whole grain bread
1 pinch  black pepper
1 tbsp  vegetable oil
2 each  fresh plum tomatoes
0 1/2 tsp  dried basil
1 pinch  salt
0 1/2 cup  shredded cheddar cheese
Directions
  1. Preheat oven to 375°F.
  2. Place bread baking sheet. Brush tops with oil. Bake 6 to 8 minutes or until toasted.
  3. Dice tomatoes.
  4. In small mixing bowl, combine tomato and basil. Add salt and pepper to taste.
  5. Spoon onto bread slices. Sprinkle with cheese.
  6. Bake 3 to 4 minutes until cheese is melted. Cut each slice into triangles. Serve.
