24 oz  fresh spinach leaves
4 each  fresh mushrooms (med)
3 piece  red onion slices
0 1/4 cup  shredded mozzarella cheese
1 1/2 tsp  balsamic vinegar
1 tsp  olive oil
1 tsp  cold water
1 pinch  salt and pepper
  1. In large bowl, place spinach leaves, mushrooms, onion, and cheese.
  2. In separate bowl, whisk vinegar, olive oil, water, salt, and pepper. Drizzle over spinach mixture.
  3. Microwave salad for 1 minute on medium setting, then serve.
