1 each  medium tomatoes
1 each  scallions
0 1/2 each  Cucumber, fresh, medium
2 tbsp  chopped green bell peppers
1 1/2 tbsp  Yogurt, plain, nonfat
2 1/4 tsp  fresh lemon juice
0.125 tsp  minced garlic
0 1/4 tsp  ground cumin
1 tsp  fresh mint
0.125 tsp  salt
1 pinch  black pepper
  1. Mix together the tomato, scallion, cucumber, and bell pepper in a bowl.
  2. In a separate bowl, whisk together the yogurt, lemon juice, garlic, cumin, mint, salt, and pepper. Pour over the vegetables and toss to mix.
