Ingredients Directions
  1. Spray a nonstick saucepan with the cooking spray. Sauté the onion and garlic for about 2 minutes over medium-high heat.
  2. Mix in the bell pepper, zucchini, tomatoes, and chicken broth and bring to a simmer.
  3. Stir in the thyme, basil, vinegar, and pepper and let simmer for about 15 minutes.
  4. Cook the rice in accordance with the directions on the package. Add to the soup and serve.
