2 tbsp  quick cooking tapioca
2 tsp  sugar
1 each  SPLENDA┬« No Calorie Sweetener packets
1 each  eggs
1 cup  whole milk
0 1/2 tsp  vanilla extract
0.3333 cup  fresh raspberries
  1. In microwave-safe bowl, whisk tapioca, sweetner, egg, milk, and sugar, if desired.
  2. Microwave for 3 minutes on high.
  3. Whisk together again and microwave for 2 additional minutes or until mixture begins to boil.
  4. Stir in vanilla extract.
  5. Divide between 4 small dessert bowls.
  6. Cover with plastic wrap or waxed paper. Allow to cool at room temperature or in refrigerator at least 20 minutes. Mixture will thicken.
  7. Remove from refrigerator, stir and spoon berries on top.
