8 oz  fresh mint
0 1/2 cup  chopped parsley
2 each  medium garlic cloves
2 tbsp  grated parmesan cheese, low sodium
2 tbsp  chopped walnuts
2 tbsp  olive oil
2 tbsp  low sodium vegetable broth
1 pinch  salt
1 pinch  black pepper
  1. Using a food processor or blender, puree mint, parsley, garlic, cheese, walnuts, and oil until finely chopped. Blend in enough of the broth to make a slightly thick consistency. Sprinkle with salt and pepper.
