1 tbsp  fennel seed
1 cup  cold water
1 each  fennel bulb
0 1/2 cup  chopped parsley
2 each  medium garlic cloves
1 oz  walnut halves
3 tbsp  cold water
1 tbsp  olive oil
0 1/4 cup  Cheese, parmesan style topping, reduced fat, grated
1 pinch  salt
1 pinch  black pepper
  1. Soak fennel seeds in hot water 10 minutes; strain.
  2. Using a food processor or blender, puree fennel, fennel seeds, parsley, and garlic until finely diced. Blend in walnuts, 3 tablespoons water, and oil and process until walnuts are chopped. Mix in cheese and sprinkle with salt and pepper.
