  1. Preheat the broiler.
  2. Sauté the onion and garlic in a nonstick skillet for 4 minutes over medium-high heat.
  3. Mix in the tomatoes, red bell pepper, green bell pepper, mushroom, basil, and pepper. Cook for about 3 to 5 minutes, stirring often.
  4. Spray the broiler pan with the cooking spray. Set the polenta on the pan and broil for 3 minutes then turn over, spray with the cooking spray, and broil for another 3 minutes.
  5. Divide the polenta among four plates and top with the vegetables and the sauce.
