0 3/4 cup  fresh eggplant, cubed
0.125 tsp  salt
1 each  medium onions
4 each  medium garlic cloves
1 each  olive oil cooking spray
1 pinch  black pepper
2 each  fresh plum tomatoes
4 oz  Pasta, angel hair, dry, package
2 tbsp  fresh basil
0.3333 cup  part skim ricotta cheese
Directions
  1. Preheat the oven to 425 degrees F.
  2. Sprinkle the salt over the eggplant and let sit for 5 minutes.
  3. Spray a nonstick baking pan with the cooking spray.
  4. Mix together the eggplant, onion, and garlic, spread evenly on the pan, and spray with the cooking spray.
  5. Roast for about 15 minutes, stirring occasionally.
  6. Mix in the tomatoes, turn the oven off, and place the pan in the oven while preparing the pasta.
  7. Cook the pasta in according to the directions on the package.
  8. Drain and combine with the eggplant mixture, basil, and cheese.
  9. Toss with 2 forks to mix.
