Ingredients Directions
  1. Place the carrots in boiling water and cook for 4 to 5 minutes; drain.
  2. Spray a nonstick sauté pan with the cooking spray. Sauté the carrots for 1 minutes over medium heat.
  3. Add in the oranges and squeeze the juice into the pan. Increase the heat to high and mix in the mint. Cook until all of the juice has evaporated, approximately 1 minute.
