1 each  butter flavored cooking spray
2 oz  frozen chopped onion
2 each  medium garlic cloves
1 cup  cold water
1 cup  Rice, brown, whole grain, instant
0 1/4 cup  shredded carrots
1 tsp  fresh lemon peel
0 1/4 tsp  ground cumin
0.125 tsp  ground cayenne (red pepper)
0.125 tsp  ground cinnamon
0.125 tsp  salt
0 1/2 tsp  fresh lemon juice
  1. Spray a nonstick saucepan with the cooking spray. Sauté the onion and garlic for approximately 4 minutes over medium heat. Pour in the water and bring to a boil.
  2. Mix in the rice, carrot, lemon zest, cumin, cayenne pepper, cinnamon, salt, and lemon juice. Turn the heat off, cover, and let sit for 5 minutes.
