2 tsp  olive oil
1 each  medium garlic cloves
0 1/4 cup  chopped red bell peppers
0 1/2 cup  canned garbanzo beans (chickpeas), unsalted
1 lb  fresh spinach leaves
1 pinch  salt
1 pinch  black pepper
  1. Mince garlic. Drain and rinse garbanzo beans.
  2. In large skillet, heat olive oil over medium high. Add bell pepper and sauté 5 minutes. Add garlic, sauté additional 1 minute.
  3. Add beans and cook 2 minutes until beans are thoroughly heated.
  4. Add spinach, salt, and pepper. Cook, stirring often, until spinach wilts, about 3 minutes. Serve.
