4 tsp  olive oil
2 each  medium zucchini
1 oz  fresh mint
1 each  medium garlic cloves
0 1/2 tsp  salt
0 1/4 tsp  black pepper
  1. In large skillet, heat 2 teaspoons of oil over medium high. Add 2 cups of zucchini, cook 4-5 minutes.
  2. Move zucchini to medium bowl.
  3. Cook remaining 2 cups of zucchini 4-5 minutes. Transfer to bowl with other zucchini.
  4. Add 2 teaspoons of oil, mint, garlic, salt, and pepper.
  5. Toss, refrigerate 30 minutes until chilled.
