4 tsp  olive oil
2 each  medium zucchini
1 each  medium garlic cloves
1 tbsp  fresh mint
0 1/2 tsp  salt
0 1/4 tsp  black pepper
  1. Cut zucchini lengthwise in quarters, then in 1/2" slices. Mince garlic.
  2. In large skillet, heat 2 teaspoons of oil over medium high. Add zucchini, cook 2-3 minutes.
  3. Add garlic and cook additional 2-3 minutes, stirring constantly.
  4. Move zucchini to medium bowl.
  5. Add 2 teaspoons of oil, mint, salt, and pepper.
  6. Toss, refrigerate 30 minutes until chilled.
