4 oz  couscous
2 tsp  olive oil
0 1/2 cup  fresh chopped onion
2 each  medium garlic cloves
4 oz  Peas, chickpea, mature, cooked
0 1/4 cup  chopped parsley
2 tbsp  fresh lemon juice
1 tsp  salt
0 1/2 tsp  black pepper
  1. Boil 1 1/2 cup of water and stir in couscous.
  2. Remove from heat and let stand for 5 minutes.
  3. In a separate skillet, heat oil, add onion and garlic.
  4. Cook on medium heat stirring frequently until golden brown.
  5. Mix chickpeas and 1 tablespoon of water, cooking it until water evaporates.
  6. Mix everything together stirring in couscous, parsley, lemon juice, salt, and pepper.
