0.3333 cup  white cornmeal
0.3333 cup  bread crumbs
1 1/2 tsp  cajun seasoning
16 oz  canned oysters, drained
1 each  cooking spray
1 tbsp  vegetable oil
4 oz  French bread baguette
0 1/4 cup  light mayonnaise
3 tbsp  yellow mustard
1 1/2 cup  romaine lettuce
1 each  medium tomatoes
  1. Mix together the cornmeal, breadcrumbs, and Cajun seasoning in a bowl.
  2. Dredge the oysters in the mixture.
  3. Spray a nonstick skillet with the cooking spray.
  4. Heat the oil over medium heat.
  5. Cook half of the oysters for 3 minutes then turn over and cook for another 3 minutes.
  6. Remove from the skillet.
  7. Add 1 1/2 teaspoons of the oil to the skillet and cook the remaining half of the oysters for 3 minutes then turn over and cook for an additional 3 minutes.
  8. Slice the bread horizontally in half.
  9. Smear the mayonnaise and mustard on the bread slices.
  10. Set the lettuce and tomato on the bottom half of the bread slice.
  11. Set the oysters on the tomato slices then place the top half of the bread slice on top.
  12. Cut into 4 equal pieces.
