1 1/4 cup  cornmeal
1 cup  frozen sweet corn kernels
0 3/4 cup  white all purpose flour
1 tbsp  sugar
2 1/2 tsp  Baking Powder, double acting
0 3/4 tsp  salt
1 cup  low fat buttermilk
1 each  eggs
  1. Preheat oven to 425 degrees.
  2. Spray muffin cups with nonstick cooking spray.
  3. Mix cornmeal, corn, flour, sugar, baking powder, buttermilk, egg, and salt together.
  4. Evenly distribute the batter into the muffin cups before baking for 20 to 25 minutes.
  5. Remove from oven and let cool before serving.
