8 oz  liquid egg substitute
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1 each  cooking spray
0 1/4 cup  Cheese, cheddar, mild, reduced fat, shredded
4 each  Tortilla, flour
0 1/2 cup  Salsa, thick & chunky
0 1/4 cup  fat free sour cream
2 tbsp  fresh cilantro
  1. Mix together the egg substitute, salt, and pepper in a bowl. Spray a nonstick skillet with the cooking spray and heat over medium heat.
  2. Cook the egg mixture, stirring frequently, for about 2 minutes or until it is softly set. Turn the heat off and sprinkle the cheese on top.
  3. Divide the egg mixture evenly over the tortillas and spoon the salsa, sour cream, and cilantro on top. Roll the tortillas into a burrito and top with the additional salsa as desired.
