15 oz  canned fat free lentil carrot soup
0 1/2 cup  cold water
6 oz  tomato lentil couscous dry mix
4 cup  salad greens
0 1/4 cup  balsamic vinaigrette
0 1/4 cup  garlic & herb feta crumbles
0 1/4 cup  peanuts
1 each  medium apples
  1. Mix together the soup, water, and the season packet from the couscous mix in a saucepan. Bring the mixture to a boil. Add the couscous.
  2. Turn the heat off and let sit, covered, for 5 minutes. Fluff the mixture using a fork.
  3. Put the salad greens and vinaigrette in a bowl. Toss to mix. Put 1 cup of the greens on 4 separate plates.
  4. Set 3/4 cup of the couscous mixture on the greens. Sprinkle the feta cheese and peanuts on top. Serve with the apple slices on the side.
