2 cup  white all purpose flour
0.3333 cup  sugar
2 tsp  low sodium baking powder
0 1/4 tsp  salt
0 1/4 cup  Coconut, dried, flaked, sweetened, canned
8 oz  Yogurt, vanilla, low fat
0 1/4 cup  vegetable oil
0 1/4 tsp  coconut extract
1 each  Eggs, large, raw
1 each  egg whites
1 each  cooking spray
  1. Preheat the oven to 400 degrees. Spray a muffin pan with the cooking spray.
  2. Mix together the flour, sugar, baking powder, salt, and coconut in a bowl.
  3. Mix together the yogurt, vegetable oil, coconut extract, egg, and egg white in a bowl.
  4. Combine with the flour mixture and stir until all of the ingredients are moistened.
  5. Pour into the muffin cups.
  6. Bake for about 19 to 20 minutes. Take out of the oven and remove from the pan instantly.
