Ingredients Directions
  1. Spray a small Dutch oven with the cooking spray. Mix together the meat and pepper in the oven. Cook for about 10 minutes over medium-high heat, stirring to break up the larger pieces.
  2. Decrease the heat to medium. Mix in the corn and cook for 3 minutes. Stir in the tomatoes and salsa. Cook for about 5 minutes.
  3. Divide the mixture among 4 bowls and top each with 3 tablespoons of cheese and the pumpkinseeds.
