4 piece  sliced whole wheat bread
0 1/4 cup  ground almonds
0.3333 cup  soy veggie crumbles
1 tbsp  chopped parsley
0 1/2 tsp  garlic powder
0 1/2 tsp  onion powder
1 tsp  paprika
0 1/4 tsp  black pepper
2 each  boneless skinless chicken breasts
2 each  egg whites
1 each  cooking spray
  1. Preheat oven to 400 degrees F. Put all ingredients except chicken and eggs in a medium-sized plastic bag and shake to mix.
  2. Lightly beat egg whites.
  3. Pound the chicken thin and slice into 1/2-inch strips. Dip in the beaten egg.
  4. Put chicken pieces in the bag, a few at a time, and shake so that all surfaces get completely covered.
  5. Arrange chicken pieces right side up in a greased, lined casserole dish.
  6. Spray with non-stick cooking spray and bake for 30 minutes, or until tender.
