6 oz  boneless skinless chicken breasts
1 each  olive oil cooking spray
3 tbsp  minced onion
1 each  medium garlic cloves
0 1/4 tsp  chili powder
0 1/4 tsp  ground cumin
0 1/4 tsp  ground oregano
1 pinch  ground cayenne (red pepper)
1 pinch  salt and pepper
1 each  6-inch corn tortillas
1 cup  Lettuce, iceberg
2 tbsp  Cheese, monterey jack, shredded
1 tbsp  fresh cilantro
0 1/4 cup  salsa
0 1/4 cup  fat free sour cream
  1. Trim off any extra fat from the chicken breast then finely mince.
  2. Preheat the oven to 350 degrees Fahrenheit. Spray a nonstick skillet with the cooking spray. Cook the onion and garlic for 4 minutes over low heat.
  3. Mix in the chicken, chili powder, cumin, oregano, cayenne pepper, salt, and pepper. Cook for approximately 5 minutes, stirring continuously.
  4. Use one sheet of aluminum foil to wrap the tortillas. Place in the oven and heat for 5 minutes.
  5. Combine the lettuce, cheese, and cilantro in a bowl.
  6. Set the tortillas on two plates, spoon the chicken mixture on the tortillas, sprinkle with the lettuce mixture, then add sour cream and salsa to your desire.
