Ingredients Directions
  1. Place the eggplant and 2 tablespoons of water in a microwave proof dish. Cook, covered, for 3 minutes on a high setting. Drain and mix in the garlic.
  2. Cook the pasta according to the directions on the package. Drain then put back in the pot.
  3. Add the ricotta cheese, eggplant, olive oil, Parmesan cheese, tomatoes, basil, and pepper. Stir to mix.
