1 each  olive oil cooking spray
0 1/2 tbsp  olive oil
0 1/2 tbsp  fresh lemon juice
0.125 tsp  kosher salt
1 pinch  black pepper
0 1/2 each  Cauliflower, head, small, 4", fresh
0 1/2 tbsp  bread crumbs
1 tbsp  grated Parmesan cheese
  1. Preheat the oven to 475 degrees F. Spray a nonstick baking pan with the cooking spray.
  2. Whisk the olive oil, lemon juice, salt, and pepper together in a bowl. Place the cauliflower in the olive oil mixture and toss to mix.
  3. Place the cauliflower on the baking pan and pour the left over olive oil mixture on top. Roast for about 6 to 8 minutes; turn over and roast for another 6 to 8 minutes.
  4. Toast the bread crumbs in a toaster oven. Mix together the toasted bread crumbs and the parmesan. Top the cauliflower with the bread crumb mixture.
