1 each  cooking spray
1 cup  Blueberries, fresh
2 tsp  grated orange peel
2 tbsp  sugar
2 tbsp  canola oil
1 each  Eggs, large, raw
0 1/2 cup  Flour, all purpose, unbleached, enriched
0 3/4 tsp  low sodium baking powder
0.125 tsp  salt
0 1/4 cup  Milk, evaporated, nonfat/skim
  1. Preheat the oven to 350 degrees F. Spray a 6-inch round baking pan with the cooking spray. Place the blueberries in the pan and season with 1 teaspoon of orange zest.
  2. Mix together the sugar and oil in a bowl. Add the egg and whisk until mixture reaches a thick and smooth consistency.
  3. Sift the flour, baking powder, and salt together. Combine with the egg mixture. Add the milk and mix well. Add 1 teaspoon orange zest and stir to mix.
  4. Pour the mixture evenly over the blueberries. Bake for approximately 20 to 25 minutes. Let cool before serving.
