8 oz  orange roughy fillet
2 each  scallions
6 each  asparagus spears, fresh, small
1 each  medium oranges
0 1/4 tsp  ground ginger
0.125 tsp  garlic powder
1 pinch  black pepper
1 each  butter flavored cooking spray
1 tbsp  orange juice
  1. Preheat the oven to 425 degrees F.
  2. Set the fillets in the center of the foil pieces.
  3. Place the scallions, asparagus, and orange slices on top.
  4. Season the fillets with the ginger, garlic powder, and pepper.
  5. Gently spray the fillets with the cooking spray.
  6. Pour 1/2 tablespoon of orange juice on the fillets.
  7. Fold the foil around the fillets and seal to close.
  8. Set the foil wrapped fillets on a baking sheet and bake for about 8 to 10 minutes.
