4 oz  fresh green beans
0 1/4 tsp  salt
1 tsp  olive oil
1 each  medium shallots
1 1/2 tbsp  balsamic vinegar
1 tbsp  sliced almonds
  1. Wash and trim beans. Remove skin from shallot and chop finely.
  2. In medium covered saucepan, bring water and salt to boil. Cook beans, uncovered, for 3 minutes or until tender. Drain and rinse under cold water.
  3. In empty saucepan, over medium high, heat 1 teaspoon olive oil. Add shallots and cook 3 minutes, stirring often. Add green beans and cook for 2 minutes, stirring often.
  4. Add vinegar and cook for 30 seconds, stirring to coat.
  5. Transfer to serving bowl. Sprinkle with almonds.
