8 oz  fresh spinach leaves
8 oz  soft tofu
3 tbsp  fresh lime juice
1 tbsp  safflower oil
2 each  medium garlic cloves
1 tsp  ground oregano
1 pinch  ground nutmeg
1 pinch  black pepper
  1. In blender or food processor, combine all ingredients. Pulse until well mixed.
  2. Cover and refrigerate for at least 10 minutes before serving.
