6 oz  part skim ricotta cheese
1 tsp  dijon mustard
1 each  medium garlic cloves
12 each  Mushrooms, fresh, large
1 tbsp  fresh lemon juice
1 tbsp  chopped parsley
1 pinch  paprika
  1. Combine the cheese, dijon, and garlic in a bowl.
  2. Coat the mushrooms with the lemon juice. Stuff the mushroom caps with the cheese combination. Sprinkle parsley and paprika on top.
