Ingredients

1 each  whole chicken, raw
4 each  medium garlic cloves
2 each  medium celery stalks
6 each  parsley sprigs
1 each  bay leaves
0 1/4 tsp  black peppercorns
2 each  medium onions
1 each  medium carrots
1 cup  fresh sliced parsnip
8 cup  cold water
Directions
  1. In a large stock pot, combine all ingredients and bring to boil.
  2. Reduce heat to low and simmer 15 minutes. Skim froth from top.
  3. Cover and simmer 2 hours.
  4. Remove meat to large bowl.
  5. Strain broth over large bowl. Discard all solids.
  6. Store, covered, in refrigerator up to 3 days or freeze.
