1 each  olive oil cooking spray
0 1/4 cup  shallots, chopped
2 each  medium garlic cloves
2 cup  fresh mushroom slices
0.3333 cup  vegetable broth
2 tbsp  fresh lemon juice
0 1/4 tsp  ground thyme
2 cup  low sodium vegetable broth
2 tbsp  cornstarch
0.125 tsp  salt
0.125 tsp  black pepper
  1. Lightly coat pot with cooking spray. Heat over medium, add shallots and garlic. Cook 3 - 4 minutes, or until soft.
  2. Reduce heat to medium-low. Add mushrooms, cover, and cook 5 additional minutes.
  3. Add sherry, lemon juice, and thyme. Bring to boil.
  4. Lower heat, simmer 5 minutes, or until all liquid evaporates.
  5. In mixing bowl, whisk together broth and cornstarch. Add to pot and return to boil. Continue boiling, stirring constantly, 1 minute or until thick.
  6. Sprinkle with salt and pepper.
