1 1/2 cup  chopped leeks
1 1/2 cup  fresh chopped red onion
6 each  medium shallots
3 tbsp  olive oil
0 1/4 cup  white all purpose flour
14 1/2 oz  low sodium vegetable broth
0 1/4 tsp  thyme, leaves, ground
0 1/2 tsp  salt
0 1/4 tsp  black pepper
Directions
  1. Cook leeks, onions, and shallots, in oil, in a pot for 2 to 3 minutes. Lower heat to medium-low and slowly cook 20 to 25 minutes or until vegetables are lightly browned. Whisk in flour and cook over medium heat 1 to 2 minutes.
  2. Mix in broth, thyme, salt, and pepper and bring to a boil. Continue boiling, whisking continually 1 to 2 minutes or until thick.
