1 each  medium red bell peppers
1 each  chopped green bell peppers
1 each  large yellow bell pepppers
1 each  medium onions
3 each  medium garlic cloves
2 tbsp  olive oil
2 tbsp  cold water
16 oz  tomato sauce, low sodium
0 1/2 tsp  salt
0 1/4 tsp  black pepper
  1. Cook bell peppers, onion, and garlic in oil 2 to 3 minutes.
  2. Pour in water, cover, and cook over medium to medium-high heat until peppers are wilted.
  3. Remove cover and simmer over medium-low heat 20 minutes.
  4. Mix in tomatoes and bring to a boil.
  5. Lower heat and simmer 10 to 15 minutes.
  6. Season with salt and pepper.
