1 each  cooking spray
1 each  small onions
0 1/4 cup  sliced carrots
0 1/4 cup  fresh chopped celery
3 each  medium garlic cloves
0 1/2 tsp  oregano leaves
0 1/2 tsp  tarragon, leaves, ground
0 1/2 tsp  ground thyme
0.125 tsp  ground nutmeg
8 oz  tomato sauce, low sodium
8 oz  Tomatoes, whole, peeled, unsalted, canned
0 1/4 cup  white wine
8 oz  Vegetarian Meat, beef, ground
1 pinch  salt
1 pinch  black pepper
  1. Coat a medium pot with cooking spray and heat over medium heat. Cook onion, carrot, celery, and garlic 5 minutes or until soft. Mix in oregano, tarragon, thyme, and nutmeg and cook 1 to 2 more minutes.
  2. Stir in tomato sauce, tomatoes, wine, and protein crumbles. Bring to a boil. Lower heat and simmer 15 minutes, stirring often. Sprinkle with salt and pepper.
