Dressing
4 tbsp  olive oil
1 tbsp  shallots, chopped
0 3/4 cup  Ocean Spray® Light Fruit & Veggie Cranberry Strawberry Banana Juice Drink
2 tbsp  sugar
1 tbsp  red wine vinegar
2 tsp  cornstarch

Salad
6 oz  fresh baby spinach
1 cup  fresh strawberries
0 1/4 cup  slivered almonds
Directions
  1. In a small skillet, heat 1 tbsp of the oil over medium heat.
  2. Cook shallot 1 minute or until softened.
  3. Stir in remaining dressing ingredients; cook until mixture boils and is thick.
  4. Cool to room temperature. Whisk in remaining oil.
  5. Divide spinach among 4 salad plates. Top with strawberries.
  6. Drizzle with dressing and top with almonds.
