0 1/2 cup  cold water
1 tsp  cornstarch
0 1/4 cup  white wine vinegar
2 tbsp  olive oil
0 1/2 tsp  ground oregano
0 1/2 tsp  salt
0.125 tsp  black pepper
  1. Whisk together water and cornstarch in a pot and heat over medium-high heat; cook for 1 minute, stirring continually.
  2. Take pot off of heat and mix in champagne vinegar, oil, oregano, salt, and pepper. Pour into a bowl and wrap with plastic wrap and refrigerate until ready to use.
