2 1/4 cup  cold water
0 3/4 cup  dried yellow split peas
0.125 tsp  hot red pepper flakes
6 each  medium garlic cloves
1 tbsp  fresh lemon juice
1 tsp  extra virgin olive oil
1 1/2 tsp  ground cumin
0 3/4 tsp  salt
2 tbsp  fresh chopped red onion
2 tbsp  fresh dill weed
Directions
  1. In large saucepan, add water, peas, red pepper, and garlic. Bring to boil.
  2. Place lid halfway over pot, lower heat, and simmer 40 minutes, stirring often, until almost all the liquid is evaporated and peas are soft. Let cool.
  3. Remove peas from heat. Cool at room temperature for 10 minutes.
  4. In food processor fitted with steel blade, add pea mixture. Blend until smooth. Add lemon juice, 1/2 tsp oil, cumin, and salt. Pulse until well blended.
  5. Spoon pea purée into serving bowl and top with remaining olive oil, onion, and dill.
