0 1/2 cup  cold water
0.3333 cup  golden raisins
18 oz  fresh baby spinach
2 tbsp  cold water
1 tsp  olive oil
2 each  medium garlic cloves
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1 oz  pine nuts
  1. Soak raisins in 1/2 cup boiling water and let sit 15 minutes or until raisins are swollen; strain.
  2. Add spinach and 2 tablespoons water in a large pot and cook over medium-high heat for 3 minutes or until spinach wilts; stir often. Using a slotted spoon take spinach out of pot and let dry.
  3. Pour oil in a skillet and heat over medium heat. Sauté garlic 30 seconds. Combine spinach, raisins, salt, and pepper in skillet and cook 1 minute or until heated through. Mix in pine nuts.
