Ingredients

1 lb  salmon fillet
1 each  cooking spray
3 tbsp  rum
5 each  large garlic cloves
1 pinch  salt and pepper
Directions
  1. Lay salmon fillet out on a tray or baking sheet. Combine the rest of the ingredients and spread evenly over salmon. Marinate refrigerated for 15-30 minutes.
  2. Preheat outdoor grill for indirect grilling. Then gently place salmon fillet over the unheated part of the grill. Keep the grill heat low.
  3. Cover with lid and let salmon grill for 25-35 minutes, depending on its thickness. Check for doneness by flaking apart the fish at the thickest part with a fork. Cooked salmon will flake easily and evenly, and its color should be light pink without any shine.
  4. To broil, prepare the salmon as above. Preheat oven broiler on high. Broil for 5 minutes, then turn gently with a wide spatula and broil for another 5-7 minutes. Check for doneness as above.
