4 each  medium garlic cloves
0 1/4 cup  fresh basil
2 tbsp  extra virgin olive oil
0 1/4 cup  balsamic vinegar
1 tbsp  SPLENDA┬« No Calorie Sweetener, granulated
4 each  fresh tomatoes
2 each  medium cucumber
1 pinch  black pepper
  1. In shallow glass dish, combine garlic, basil, oil, vinegar, and SPLENDA® or other sugar substitute.
  2. Add tomato slices, toss lightly to coat. Marinate at room temperature 1 hour, stirring and turning once.
  3. Place cucumbers in serving dish. Salt and pepper to taste. Top with marinated tomatoes.
